Cucumbers are an extremely refreshing vegetable that everyone looks forward to each year. At the BCCF, we are lucky enough to have a hoop house, which allows us to extend the growing season of certain crops, like cucumbers. We will be seeding cucumbers in the hoop house early April, so that we can harvest from the plants June and July.
Cucumbers make excellent additions to salads, sandwiches, smoothies, stir-fries and much more! They are crunchy and juicy and can be added to almost any salad. Slice them up and toss them into your water with a handful of mint and a few slices of lemon for a very refreshing summer beverage.
