Storage: Store in the refrigerator for up to 1 week with stems and leaves. Kohlrabi can last longer in the refrigerator if stems/leaves are removed and the kohlrabi bulb is placed into a container with limited air circulation.
Kohlrabi, also known as the apple of the cabbage family, has a crunchy, crisp texture. Kohlrabi is delicious raw, such as in a salad or slaw. Kohlrabi acts as a great substitute for potatoes when cooked; we suggest replacing potato french fries with kohlrabi matchsticks in meals. To do so, slice your kohlrabi into wedges or matchsticks, lightly dress in oil, salt and pepper and place in the oven until crisp. Kohlrabi’s leaf tops, which are also edible, can be treated similarly to any other cooking green.
