Storage: Store in the refrigerator for up to 3 weeks.
All of our potatoes will be planted by the end of March, and we grow both early and mid season potato varieties at the BCCF. Potato varieties Yukon Gold and Sangre will mature early July, while Satina, Gold Rush Russet, Blackberry and Adirondack Red a few weeks later. Potatoes can be eaten immediately after harvesting, however, curing in a dark, cool location helps to increase shelf life. Our potatoes are cured for up to 8 weeks before they are placed in the refrigerator.
Potatoes must be cooked before eating, otherwise they can be poisonous! Our potato varieties work well (and look beautiful!) roasted together. Potatoes are also great mashed, boiled, sauteed or cooked into soups, chowders and other dishes. The best all-purpose potato we grow would either be the creamy, yellow-fleshed Yukon Gold or classic, white-fleshed Gold Rush Russet.
