Fennel
OSGF
Plant Family: Apiaceae
Latin Name: Foeniculum vulgare
Varieties We Grow: Fino
Storage: Fennel bulbs can store in the refrigerator for up to 1 week, though if you plan to use the fennel fronds past the first day, place the entire fennel into an airtight container/bag. Alternatively, the fronds may be removed from the bulb and stored separately.
Fennel is a member of the carrot family and has an interesting anise-like flavor that many people either love or dislike. Fennel can be eaten raw or cooked; it’s great added to salads (try arugula with fresh lemon juice, olive oil and parmesan!) or roasted in the oven. The fennel bulb is actually just the base of the stem that has woven itself into a crisp bulb-like form. The bulb and the first few inches of the stems are typically chopped off from the rest of the frilly leaves, and either cooked, sauteed, grilled, tossed into soups or chopped into smaller pieces for raw salads. The fronds can be sprinkled atop salads, crackers, cheese and more. Fennel can also be juiced for an ultra-healthy, green drink, which could be added to cocktails!
