Varieties We Grow: Ailsa Craig (Yellow), Super Star (White), Red Candy (Deep Red), Cipollini (Yellow, Saucer), Blush (Pink), Patterson (Yellow)
Storage: Store fresh/green onions in the refrigerator for up to 1 week. Once dried, store onions in a cool, dark space. Length of storage is dependent on variety:
Ailsa Craig: Up to 1 month (fresh only)
Super Star: 2 months
Red Candy: 2-3 months
Cipollini: 5 months
Blush: 5-6 months
Patterson: 8-10 months
We distribute some of our onions as fresh or spring onions right after harvesting. These onions have not been cured and do not have the paper-like outer layers that onions from the supermarket typically have. We currently cure onions in our greenhouse, where it’s warm. Both garlic and onions need to be cured for 3-4 weeks to reduce the amount of water in the bulbs, dry the protective outer paper-like layers, concentrate the flavor and increase shelf-life. We typically harvest our onions once the leaves start to yellow and fall to the side, which signals that the bulb has reached maturity.
