Plant Family: Amaryllidaceae

Latin Name: Allium fistulosum

Varieties We Grow: Parade, Ishikura, Kyoto Kujo

Storage: Store in the refrigerator for 1 week. To limit the onion-like smell within your refrigerator, place scallions in a bag/airtight container. 

Scallions, also known as bunching onions or green onions, add a mild onion flavor to any dish. The whole stem and elongated bulb can be used, but the lower, white portion of the plant will have the strongest flavor. We suggest removing the roots from the plant and washing the stalk thoroughly before cooking or eating raw. 

At the BCCF, we like to slice up raw scallions and toss them on top of stir-fries or ramen just before eating. Scallions can be used in quiches or frittatas, in scrambled eggs or omelets, on homemade pizzas or added to vegetable or fish burgers.

Storage: Fresh shallots should be stored in the refrigerator and consumed within 1 week. Once dried, shallots can last on the counter for up to 3 weeks.
