Storage: Store in the refrigerator for up to 3-5 days. If asparagus is placed into a small pot of water, it can be stored in the refrigerator for an additional few days (up to a week).
Asparagus is a cold-season perennial originating from the Mediterranean region. At the BCCF, we grow both green and purple asparagus. Since our asparagus plants are young, we try to harvest throughout the Spring sparingly, so as not to harm the plant's maturation.
Delicious raw, roasted, fried or grilled, asparagus can make an easy side dish that pairs well with any meal. We typically eat the smaller, young shoots called spears, which are much more tender than larger, stringy shoots. Asparagus has a mild grassy flavor and is so tasty when prepared simply. We recommend lightly roasting the spears in olive oil or butter then serving with lemon juice and parmesan cheese!
