Cabbage is a densely packed head of flavorful leaves in the brassica family. Green and red cabbage is rich in bone-building vitamins C and K. Like many other red/purple vegetables and fruits, red cabbage is also rich in anthocyanin compounds which are thought to help lower inflammation and fight cancer.
Cabbage is delicious eaten raw in slaws and salads, cooked down into stir-fries/sautés or pickled and used as a garnish on burgers, sandwiches, salads and more. Red cabbage is an amazing choice for summertime meals or side dishes– it’s light and airy, super vibrant and packed with flavor.
