Storage: Store carrot tops in an airtight container/bag in the refrigerator for up to 3 days. Store carrot roots loose or in a vented container/bag in the refrigerator. Though carrots are best consumed fresh, they can be stored for several months in the refrigerator or a cool room, like a root cellar.
The iconic, brightly-colored carrot is in fact the taproot of a biennial member of the family Apiaceae. Modern carrots were bred from their wild relatives to have milder flavor, fewer branched roots and less woody cores. The vegetable shares a recent lineage with other popular umbellifers, such as parsley and dill, which underwent selection for their leaves and seeds.
Delicious as a raw snack or a cooked side, carrots are wonderfully versatile. Carrots can be roasted, steamed, diced, fermented or added to soups, stir frys, desserts and even smoothies. Carrot juice with fresh pressed ginger and apples is a super refreshing treat! We recommend roasting carrots with a beautiful blend of other root vegetables, like potatoes and parsnips. The greens of carrots are also edible– use them in place of your favorite cooking greens or try carrot top pesto.
